Source from American cane / fields, we ferment our cane with a / Caribbean-derived yeast over long periods / with a secondary high-ester fermentation, / then distill it through 100% copper pot stills / hand-made in Spain. This creates a spirit / fuller in body and flavor that falls / somewhere between "heavy" Caribbean / ones and those of the "Agricultural" style of / the French West Indies. / My goal was to create an independent / distillery bringing alternative spirits to a / market dominated by mass-production and / marketing-hype.
