Historical NotesThis Gaggia cappucino machine was used at Poli's Restaurant in Squirrel Hill. This type of high pressure espresso machine, developed by Achille Gaggia in 1948, uses a spring piston to force hot water under pressure through the coffee grinds in about fifteen seconds. His Milan-based company, Gaggia, was one of the first cappuccino machines imported into the United States.
